It’s a brand new year which means it’s time start off on a clean slate and what better way to do so than through incorporating a healthy diet into my everyday lifestyle. With that being said, I went ahead and partnered up with Moon Cheese snacks to create a quick, simple, and delicious keto-friendly recipe using all three varieties of their snacks: Cheddar, Gouda, and Pepper Jack. In case you’re not familiar with Moon Cheese snacks they are an all-natural, low-carb, gluten-free, and keto-friendly snacks that contain high quality protein and are non-perishable and a shelf-stable that is perfect for travelers and for those who are constantly on-the-go. There is no refrigeration required and the bags are resealable so you can take them anywhere! You can usually find their products at Publix stores all across Florida and also online for purchase at Amazon and on the brand’s website

Since I am a huge fan of Parmesan Crusted Chicken and any baked chicken recipes in general I wanted to create a similar recipe but with my own little twist to it so instead of using shredded Parmesan cheese for the crust I used all three varieties of Moon Cheese snacks instead and honey as my two main ingredients for the recipe and I was really happy and overall satisfied with how the dish came out. Not only is this recipe clean, light, healthy, and delicious but it’s also very quick to make and you don’t need too many ingredients to make it with so it’s very simple and cost efficient! I felt it paired well with a salad so I served it with my favorite salad recipe, Raspberry Cranberry Glazed Walnut which has all of my favorite toppings in one bowl!

Honey Three Cheese Crusted Chicken Recipe

Chicken:

  • 1 pack of Purdue Boneless Chicken Breast Tenderloins
  • 3 packs of Moon Cheese snacks (1 of each variety: Cheddar, Gouda, and Pepper Jack)
  • 1 Egg
  • 1/8 tsp Salt
  • 1/8 tsp Lemon Pepper Seasoning
  • 1/4 tsp Garlic Powder w/Parsley Seasoning
  • Oregano
  • Honey
  • Olive oil (to coat pan)

 

Side Salad:

  • 1 Cup of Spinach
  • Raspberry Vinaigrette Dressing
  • Tomatoes
  • Crispy Fried Onions
  • Raspberry Cranberry Walnut Frisco (1 pack)
  • Feta Cheese

 

Prep time – 10 minutes
Cooking time – Approximately 20 minutes

Instructions:

1.) Preheat oven to 350 degrees
2.) Grease baking pan with olive oil and place chicken on a cutting board and put aside
3.) In a small bowl, whisk egg until fully beaten and then add salt, lemon pepper seasoning, garlic powder seasoning, and dash of oregano and whisk to blend
4.) Using a food processor, add all three varieties of Moon Cheese and pulse until cheese is ground and well blended and then add cheese to a medium size bowl
5.) Coat chicken in egg mixture and then in cheese mix on both sides
6.) Add chicken to pan and coat with the rest of the remaining cheese mix until chicken is fully covered
7.) Drizzle honey on top of chicken
8.) Bake chicken in oven for about 20 minutes
9.) Remove from oven and serve with a side of Raspberry Cranberry Glazed Walnut salad (see ingredients above) and Enjoy!
